Salmon with Lentils Recipe : Ina Garten
Obviously Ina Garten would have the BEST lentil recipe I have ever made - and the salmon is delicious as well.
I made this Friday night with the salmon (except a regular two person portion - and since I hadn’t noticed that the recipe calls for skin removed, I didn’t have the fish monger take the skin off and I had my first ever skin removal experience) and Matt had THIRDS of the lentils, and then I served the leftover lentils with red snapper last night. Still amazing.
Matt read about the Mediterranean diet (as did most people) in the NYTimes last week, and I’ve used his fascination with this diet (which is not so much a diet as a lifestyle) to serve as much fish and whole grains and legumes as possible until he gets fed up and says enough.
I think I’m making quinoa tonight.
